Nixtamalization
Europe imported maize in the 1500s, but left behind the one step that made maize safe as a staple. Dried kernels cooked in an alkaline bath, usually slaked lime at roughly pH 10-12, become masa: softer, more nutritious, and able to hold a tortilla together. Skip that bath and a corn-heavy diet can end in pellagra: dermatitis, diarrhea, dementia, and death.
How the chemistry works
Nixtamalization cooks maize in calcium hydroxide, wood ash lye, or another alkaline solution, then rests and rinses it before grinding. The alkali loosens the pericarp, changes starch behavior, adds calcium, and makes bound niacin more available to human digestion. The short version: the chemistry turns a grain into a food system.
The technical detail matters because raw maize is deceptive. It contains niacin, but much of it is tied up in forms humans cannot use well. Alkaline processing breaks enough of those bonds to shift the nutrition of a diet. It also changes texture: plain cornmeal crumbles, while masa can be pressed, folded, steamed, fried, or shaped.
A tortilla is not just flattened corn. It is a biochemical artifact.
What happens when the step disappears
Maize reached Europe through Iberian routes after 1492. The crop spread fast because it yielded well in poor soils and fed both people and animals. The processing knowledge did not travel with the same force.
By the 1700s, pellagra was reported in maize-eating regions of Europe; Francesco Frapolli named the disease in 1771. In the United States, the worst wave came in the South in the early 1900s. Joseph Goldberger, working for the U.S. Public Health Service, argued in 1914 that pellagra was dietary rather than infectious. In 1915, he produced the disease in volunteer prisoners at Mississippi's Rankin State Prison Farm through a restricted diet, then showed that diet change could prevent it.
The cruel part is that Mesoamerican cooks had already solved the practical problem centuries earlier without knowing the word "niacin."

The names carry history. Nixtamal comes through Nahuatl: nextli for ashes and tamalli for cooked maize dough, though exact etymology varies by source. Pozole comes from Nahuatl pozolli, a word tied to foamy or swollen maize. The technique sits inside the language, not just the recipe.
What's contested
The nutritional effect is not the argument. The live questions are older and more archaeological: when did alkaline maize processing begin, and how many times was it invented? Katz, Hediger, and Valleroy's 1974 cross-cultural study in Science treated alkali processing as a core companion to maize agriculture in the Americas, but physical traces are harder than recipes. Lime residues, starch-grain changes, and cooking vessels do not always survive cleanly.
There is also a sharper historical question: why did Europeans adopt the crop without adopting the process? One answer is status. Colonists and landlords often treated maize as cheap feed or famine food, then asked the grain to carry a full diet. Another answer is transmission failure: seed moves through trade faster than kitchen knowledge moves through trust.
Why this has to do with other realms
Nixtamalization belongs beside concept columbian exchange because it shows the danger of moving organisms without moving practices. A crop is not a crop alone. It is a bundle: seed, soil, tool, recipe, calendar, and taboo.
It also belongs beside concept bioavailability and concept fermentation. Food traditions often look like flavor until chemistry catches up. Soaking beans, fermenting batter, sprouting grain, nixtamalizing maize: each one changes what the body can extract. The deep pattern is closer to concept knowledge transfer than to cuisine.

What grabs me here is the failure mode: the kernel traveled, the method did not. Nixtamalization is a clean reminder that useful knowledge often lives in boring steps people stop seeing because they do them every day. I read it less as food history and more as an operations warning: copy the visible artifact and you may miss the control variable.
